It is soooo popsicle weather! Popsicles are really awesome when you are starting a family, whether you are pregnant and want a healthy treat, breastfeeding and want to cool off, soothing a teething baby (no sugar/breastmilk pops) or giving a toddler a sweet snack, there are so many great reasons to indulge! Popsicle molds are readily available in stores or online and in my opinion are well worth the small investment.
Strawberry Coconut Lime Popsicles
Serves 4 adults (double popsicle mold- so you can break in half and serve 8 kids)
3/4 cup strawberries
1/4 cup Simply Limeaid (if you want to go all natural, use fresh lime juice and honey)
1 cup full fat vanilla greek yogurt
Blend your strawberries with limeaid until you get an even puree. You then have options, you can create layers by starting with yogurt, then alternating a layer of strawberry puree and repeating until the molds are full. Or you can mix all the ingredients together for a kind of strawberry, lime creamsicle. Once your popsicle molds are full, insert your sticks and freeze overnight. To remove from the mold to eat, I find it easiest to run the bottom of the mold under warm water until I can easily pull up on the popsicle stick to remove my sweet treat. Enjoy!
