Goat Cheese Flatbread with Arugula, Pear and Bacon

This is such a simple recipe that makes for the perfect weekday meal. The flavor combinations are perfection and will make you feel like you are dining at a cute gastropub, even if you have to eat it while chasingĀ a 2 year old to get him ready for bed (not speaking from experience or anything…).

Flatbread with Goat Cheese, Bacon, Pear and Arugula
2 Servings

Ingredients:
2 slices Flatbread
2 slices bacon, cooked until crispy
4 oz goat cheese
1/2 Bosc pear, thinly sliced
1 handful arugula
Aged balsamic/reduction

Preheat your oven to 400F. Bake flatbreads 5 min per side. Dress with goat cheese, pear and bacon and broil on high for 4 minutes until goat cheese is slightly smoking and crust of flatbreads are blackened at the edges. Dress with arugula and drizzle with the aged balsamic to finish.
